Gelatin is a translucent, colorless, and flavorless food ingredient derived from animal collagen. Collagen is a protein found in the skin, bones, and connective tissues of animals like cows, pigs, chickens, and fish.

1. Food Industry (Most Common Use):

Gelling Agent: This is perhaps its most well-known use. Gelatin forms a reversible gel when dissolved in hot water and cooled.
Desserts: Jellies (like Jell-O), gummy candies, marshmallows, panna cotta, aspics, trifles, mousses.
Confectionery: Gives elasticity and chewiness to items like gummy bears, fruit snacks, wine gums, liquorice, and chewable candies. It also helps to stabilize foam in aerated sweets like marshmallows.
Thickener and Stabilizer:
Dairy Products: Used in yogurts, sour cream, cream cheese, and puddings to provide a smooth, consistent texture and prevent phase separation. In ice cream, it helps prevent the formation of ice crystals and provides a smooth mouthfeel.
Sauces and Soups: Can be used to thicken and improve the texture of savory dishes.
Emulsifier: Helps to stabilize mixtures of ingredients that typically don’t mix, such as oil and water.
Texturizer: Provides a desired mouthfeel, often used in low-fat foods to mimic the texture of fat and add volume without extra calories.
Clarifying Agent: Used in beverages like wine, beer, and fruit juices to remove impurities and make them clearer and more visually appealing.
Meat Products: In processed meats like sausages, pâtés, and canned meats, gelatin acts as a binding agent, improves water retention, enhances texture, and helps maintain shape. It’s also used in the preparation of Chinese soup dumplings (xiaolongbao) to create the soupy interior.
Bakery Products: Can improve the texture and structure of cakes, cookies, and pies by retaining moisture and stabilizing fillings like buttercream.
2. Cosmetic Industry:

Thickener and Emulsifier: Used in various skincare and haircare products like facial masks, shampoos, and lotions.
Film-Former: Can create a protective film on the skin or hair.
Ingredient for Collagen Production: Though direct absorption of collagen from gelatin isn’t fully proven for all benefits, some cosmetic products use gelatin with the aim of supporting skin hydration and elasticity due to its amino acid content, which are building blocks for collagen.
